What is Shio-Koji
It is a live food that is rich in enzymes. Shio-koji imparts a rich savory flavor and makes any dish delicious. It is excellent to use when marinating vegetables, fish or meat and can be used as the base for salad dressing.
Shio-Koji brings out the “Umami” in foods, a tastey way to enhance flavor. The saltiness is mild and it will bring out the sweetness of vegetables and the savory flavor of meats. Using shio-koji is also healthy, as it will reduce the overall salt needed and adds enzymes. With shio-koji you get the same salty flavor with less than 50% of the salt content.
